Cilantro Lime Rice Recipe

This cilantro lime rice is the best you'll ever make—better than Chipotle's! It's easy, fresh, and perfect as a side for Mexican dishes like burritos, tacos, or bowls.
Ingredients:
- 2 tablespoons olive oil
- 1 1/2 cups basmati long-grain white rice
- 1 clove garlic, minced
- 2 1/4 cups water or chicken broth
- 1/2 teaspoon salt
- Zest and juice of 2 limes
- 1/2 cup fresh cilantro, chopped
Instructions:
Rinse the Rice: Rinse the basmati rice under cold water until the water runs clear. This removes excess starch and helps the rice cook fluffy.
Cook the Rice: In a medium saucepan, heat the olive oil over medium heat. Add the minced garlic and cook for about 30 seconds, until fragrant. Add the rice and cook, stirring frequently, until lightly toasted, about 2-3 minutes.
Simmer: Add the water (or broth), salt, and lime zest. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 18-20 minutes, or until the rice is tender and all the liquid has been absorbed.
Fluff and Add Flavor: Remove the saucepan from the heat and let it sit, covered, for 5 minutes. Fluff the rice with a fork, then stir in the lime juice and chopped cilantro.
Serve: Serve warm as a side to your favorite Mexican dishes or use it as a base for burrito bowls.
